Eggplant with Eggs

Cut 1 Eggplant into disks. Put them in a bowl. Add:

  • 1/4 tsp of salt
  • 1 tsp of tomato powder
  • 1/2 tsp of chili powder
  • 1/2 tsp of black pepper

Mix the spices with the disks so that all of them are covered.

Crack 2 eggs and whisk them. Heat a pan with a bit of oil and add the eggplant disks.
Cover the pan an let them steam for a bit until they are soft.

Add the eggs and cover again.

Garnish with Basil, Coriander, Tomatoes.
