What is Lactase?

Lactase is the enzyme that breaks down the polysaccharide lactose into the monosaccharides glucose and galactose. The amount of lactase is highest at birth and decreases over the course of life in most people. It is recommended to consume at least 4500 FCC of lactase per meal containing lactose.
